Haggis bon bons with truffled mayo.
Staal’s Oak roast salmon pate, sourdough, preserved lemon jam
Golden chicken and tarragon mousse with black pudding bon bon, truffled mushroom puree, tarragon oil, mushroom duxelles, dressed sweetcorn and chicken skin salt.
Cod loin with pickled mussels, parsnip bark and caramelised puree, samphire, mussel and creme fraiche sauce and parsley oil.
Beef fillet with salt baked celeriac, sticky ale pulled beef cheek, winter cabbage, broccoli and blue cheese puree, pickled stalk and red wine and thyme jus
Whipped whiskey custard with honey flapjack, macerated raspberries, brown sugar caramel and toasted oats
Dark chocolate malt delice with white chocolate cremeux, candied blood orange, chocolate crumb and honeycomb.
