Pan roast pigeon breast with black pudding bon bons, red wine silverskins, watercress and celeriac slaw, quince jam and maple roast walnuts.
Staals smoked salmon with pickled cucumber, frizzee, mini dill blinis, oak roast pate, fennel shavings and lemon mayonnaise.
Rosary whipped goat’s cheese with confit tomatoes, sourdough crisps, chorizo jam, lambs lettuce and honeyed dressing.
Golden chicken thigh boudin with dressed peas and puree, pea brulee and smokey bacon crumb.
Warrendale Wagyu sirloin steak with rosemary and smoked sea salt chips, ox tongue salad and peppercorn sauce (supplement £5)
Oven roast halibut with Whitby hairy tatties, lemon, caper and tomato beurre noisette, steamed samphire and parsley oil.
Pan roast guinea fowl with thyme roast new potatoes, buttered cavolo nero, artichoke puree, sautèed chanterelles, Yorkshire blue and game jus.
Pan roast Mathison’s duck breast with red cabbage puree, sweet potato fondant, savoy cabbage, spiced rhubarb and duck jus.
Roast butternut squash buckwheat risotto with sautèed wild mushrooms, duxelles, steamed kale, crispy hens egg and sage beure noisette.
Rhubarb cheesecake with candied almonds, stem ginger and poached rhubarb.
Rich dark chocolate delice with raspberry sorbet, chocolate soil and fresh raspberries.
