Mackerel schnitzel with burnt apple ketchup, Staal’s smoked mackerel, dill emulsion compressed apple and sea herbs.
Roast chicken terrine with crispy cured ham, confit silverskin onions, smoked poacher's, parsley mayonnaise and bacon jam.
Roast beef bavette with wild mushroom ragu, pressed rosemary potato, roast parsnip puree, sprouting broccoli and red wine jus.
Skrei cod with charred leek, smoky onion and creme fraiche sauce, crispy skin, tarragon oil, samphire and onion powder.
Poached Yorkshire rhubarb with yoghurt and polenta cake, rhubarb jam, brandysnap and cardamom baked custard.
